Homemade Croutons

We eat a lot of salad and this house no salad is complete without croutons. I got tired of paying for seasoned bread so I began to save all my bread parts – heels, bread not quite stale, small pieces. The parts went into the freezer until I was ready to make my own croutons. They are so easy make. Here’s how I do it:

Thaw the bread and cut into crouton size pieces. Spread onto a baking sheet. Drizzle the bread with extra virgin olive oil then toss all parts so each piece is lightly covered in oil. Season with kosher salt, freshly ground pepper, dried rosemary, dried thyme and dried oregano. I eyeball the seasonings. Just remember it’s easier to add more seasoning than to take it off.

Heat the oven to 250 degrees and place the croutons in the oven. Turn every five minutes until they are crisp and golden brown.
